The estate’s flagship wine, the Oppidum, is a structured and complex red this year, displaying great elegance. Its very fine tannins have been softened by 12 months’ ageing in oak barrels followed by 12 months in vats, already revealing a beautiful brick-red colour and the subtle oak notes characteristic of Provence’s finest wines.

TASTING NOTES

EYE: A deep ruby red colour with violet highlights.

NOSE: Initial aromas of ripe fruit, strawberries and fresh redcurrants, which develop upon swirling into more jam-like aromas and a hint of pepper. There are also subtle woody notes, along with hints of vanilla and cocoa.

 PALATE: Full-bodied, fresh and rich, with fruit on the palate and woody notes.

 SERVING TEMPERATURE: Between 16° and 18°

 AGING POTENTIAL: Up to 5 years


FOOD AND WINE PAIRINGS: Leg of lamb with garrigue herbs, roasted aubergine tian and a cheese platter.


PRODUCTION

Sustainable viticulture.

Terra Vitis.

The fresh, destemmed grapes are fermented in stainless steel vats using selected yeasts. During fermentation, pumping over and racking are carried out. Once this process is complete, the wine is racked to undergo malolactic fermentation in stainless steel tanks. Once this is finished, part of the wine is transferred to oak barrels for ageing for 8 to 12 months. The wine from the stainless steel tanks is then blended with the barrel-aged wine.
