Located in the heart of Green Provence, in the Var region, nestled between the Sainte-Victoire mountain and the Sainte-Baume, the family estate of Terres de Saint Hilaire offers a privileged environment of 140 hectares of vines on a total area of 1,500 hectares.
The estate offers charming accommodations - cottages and rooms, vast reception areas for your weddings and family celebrations - but also for your company seminars, an equestrian center and kilometers of forest trails for riding in complete freedom.



Les Terres de Saint Hilaire : between tradition and renewal
In the mid-19th century, the Terres de Saint Hilaire estate became independent when the son and daughter of Baron Félix du Muy divided the family inheritance. The son inherited the Château d'Ollières, while the daughter received the Saint Hilaire estate. However, this property has a much older history, dating back to antiquity, as evidenced by the remains of a Roman villa, a temple dedicated to Hercules, and an oppidum discovered in the 1950s. From constant religious activity to crafts, notably with the Grande Verrerie (Great Glassworks) which would later become the Mas de la Marotte, the estate's life has always been driven by human activity. Even in the 20th century, despite changes, the estate remained active, primarily focused on viticulture. In 2004, when we acquired the estate, we sought to preserve this rich agricultural history by restoring the buildings and revitalizing the land. Today, we are making this place an exceptional source of biodiversity and a laboratory for the viticulture of tomorrow.
Our vineyard
For more than 15 years, we have been cultivating a balanced vineyard on the Saint Hilaire lands, home to a wide variety of grape varieties, such as grenache, syrah, rolle or cabernet-sauvignon.
Our goal: to match each grape variety to its specific terroir across our 120 hectares of vineyards. While the average age of our vines is around twenty years, some of our vines, particularly the Cabernet Sauvignon, date back to 1967-68. These vines produce unique red wines, far removed from the usual competition criteria, but offering a unique tasting experience that reveals the very essence of our terroir. These wines are authentic witnesses to the history of the Terres de Saint Hilaire.

From vine to wine
Our commitment, from vine to wine, is based on simple principles: sustainable farming practices, matching each grape variety to a specific terroir, meticulous grape selection at each harvest, and painstaking winemaking. Today, these efforts are paying off: our entire range has been awarded the Terra Vitis label, guaranteeing respect for the vine, the soil, the environment, and the people who work it.
In our cellar, dating back to 1930 and continuously modernized since 2004, we craft wines that are both demanding and harmonious, expressing the true character of the grape varieties and the terroir. We use temperature-controlled stainless steel tanks in addition to concrete-epoxy tanks, with temperature control ensured by immersion heaters. The reds and some of the whites are aged in barrels as well as in two large oak casks.
The result? More than a million bottles a year, available under the Abbaye Saint Hilaire label, but above all, for our premium ranges, under the Mas de la Marotte, Le Bois du Marquisat, Oppidum, Cerisier, Tentation and Saint Hilaire sparkling wine labels.

Terra Vitis
The wines of Terres de Saint Hilaire are the product of sustainable viticulture, in accordance with the standards of the Terra Vitis label. This rigorous approach extends from vineyard management to winemaking processes, and is subject to a thorough audit conducted by the label's specialists to guarantee its compliance.
In order to best preserve the unique character of our terroir, we sometimes go beyond the requirements of the Terra Vitis label:
- We favour the use of organic fertilizers and compost.
- We use plant protection products in accordance with the Terra Vitis specifications, striving to reduce their use to the bare minimum depending on the grape varieties, the plots, and the year's climate. Each treatment decision is based on numerous observations made in the vineyard by our teams.
- The traceability of our interventions is meticulously recorded, in order to guarantee total transparency.
- We promote natural weed control by introducing sheep into our vineyards after the harvest, and leave part of the rows of vines grassed.
This meticulous work is reflected today in wines that faithfully express their terroir, and in a land that we are committed to preserving healthy and alive.
